Resumen en español El objetivo de la presente investigación es determinar las isotermas de sorción de humedad de la harina precocida de plátano verde, evaluando el comportamiento a cuatro temperaturas diferentes (20, 25, 30 y 35 ºC), en un rango de aW de 0,202 a 0,835. Los datos experimentales de actividad de agua y contenido de humedad, se ajustaron a las ecuaciones propuestas por Rattiet al.(1989); Chung y Pfost(1967); GAB (Guggenhein et al., 1984) y la ecuación BET (Brunauer et al., 2 1938); utilizando análisis de regresión no lineal y el coeficiente de determinación (R ) del programa Statistic V-6. De los modelos evaluados fueron Ratti et al. (1989) y Chung y Pfost (1967) los que ajustaron mejor las isotermas de sorción; el primero presentó un coeficiente de determinación de 0,991 y 0,996, para todas las temperaturas analizadas y el segundo un coeficiente entre 0,9735 y 0,9876. Se determinó el valor de la monocapa con las ecuaciones de BET (Brunauer-Emmett-Teller, 1938) y GAB (Guggenheim-Anderson-de Boer, 1984), con mejores resultados con el modelo de BET, cuyos valores se ubicaron entre 0,0243 y 0,0033 g de H O/g 2 de sólido. Finalmente se evaluó el calor isostérico de sorción requerido por la harina precocida de plátano verde para alcanzar el equilibrio sorcional, mediante la ecuación de Clausius-Clapeyron en su forma integrada (Soekarto y Steinberg, 1981), concluyéndose que este calor varía con la temperatura y el contenidode humedad
Resumen en inglés The objective of the present research is to determine the sortion isotherms of green/unripe plantain pre-cooked flour, and evaluating its behavior at four different temperatures (20, 25, 30 and 35 degrees Centigrades), in aAw range between 0.202 and 0.835. TheAw experimental data and humidity content adjusted well to the equations proposed by Ratti et al. (1989), Chung and Pfost (1967), GAB (Guggenhein et al. 1984), and the BET equation (Brunaueret al.,1938); utilizing Non-Lineal Regression Analysis and the Determination Coefficient (R2) of the Statistics V-6 Program. Out of the evaluated models were Ratti et al (1989) and Chung and Pfost (1967) the ones that adjusted betterthe sortion isotherms;the former showed a determination coefficient of 0.991 and 0.996, for all the analyzed temperatures, and the latter showed a coefficient of 0.9735 and 0.9876. The value of the monolayer was determined using the BET equation (BrunauerEmmett-Teller, 1938) and GAB (Guggenhein-Anderson-de Boer, 1984) thus obtaining better results with the BET method, whose values were 0.0243 and 0.0033 g H O/g 2 solids. Finally, the green/unripe plantain flour Isostheric Sortion Heat was evaluated in order to reach the sortional equilibrium, by means of the Classius-Clapeyron equation in its integrated form (Soekarto and Steinberg, 1981), thus concluding that this value varies with temperature and humidity content
