Spanish abstract | La cerveza existe en Chile desde al menos hace cuatro siglos. Los cronistas delos siglos XVI al XIX detectaron sus aspectos organolépticos y técnicas de elaboración desde la chicha. Empero, iniciada la Independencia, aquella bebida comienza su inserción en el imaginario de la élite chilena mediante la prensa y los documentos oficiales hasta 1841, cuando inicia su industrialización. Así, proponemos que la cerveza en América del Sur es una entidad premoderna que acercó a indígenas y europeos hasta que, en 1810, empieza su protoindustrialización, la cual apuntó a la mecanización de procesos y la instauración de la receta “europea” antes que sus fundamentos técnicos o su construcción cultural |
English abstract | Beer exists in Chile since, at least, four centuries. Thechroniclers from the 16thto 19thcenturies had detected its organoleptic features and production techniques through chicha. However, once the Independency started, the first mentioned drink began its insertion in the Chilean elite imaginary by press and official records until 1841, when its industrialization commenced. Thus, we propose that beer was a premodern entity in South America that gathered Europeans and Indigenous until 1810, when its protoindustrialisation began. Thisaction was directed to mechanisation processes and the establishment of a “European like” recipe before its technical foundations or cultural construction |
