Resumen en español | En el presente artículo se muestra una evaluación de la calidad física del huevo de tres razas de gallinas (Campera, Semirrústica y White Leghorn), a través de indicadores de calidad externos e internos del mismo. Se recolectaron 20 huevos de cada raza a las 33 semanas de edad, criadas en Jiguaní, provincia Granma, Cuba. Los indicadores externos fueron: peso del huevo, peso relativo, diámetro polar y transversal e índice de forma; peso, espesor y porciento de cáscara. Los indicadores internos: peso, diámetro, altura, pH, índice y porciento clara y yema, Unidades Haugh. Los datos se compararon con análisis de varianza simple utilizando el paquete STATISTIC®. Excepto el Índice clara, pH clara y yema, los demás indicadores presentaron diferencias significativas (P>0,05). El mayor peso de huevo se encontró en gallinas Leghorn (57,74 g), con respecto a Camperas (54,18 g) y Semirrústicas (49,80 g). El mayor peso relativo se obtuvo en las Leghorn (3,43%) y el menor en Camperas (2,40%). El espesor de cascaron no difirió entre Camperas y Semirrústicas (0,33 y 0,36 mm), Leghorn (0,40 mm). El mayor peso de clara (35,72 g), porciento clara (61,80%) y menor porciento yema (26,06%) se obtuvo en las aves Leghorn a pesar de tener el mayor peso del huevo. Los indicadores de calidad de huevos en los propósitos de aves estudiadas mostraron características típicas de cada raza, los mejores parámetros pertenecen a las gallinas Leghorn y los menores a las Semirrústicas |
Resumen en inglés | This article shows an evaluation of the physical quality of eggs from three breeds of hens (Campera, Semirrustic and White Leghorn), through external and internal quality indicators. Twenty eggs of each breed were collected at 33 weeks of age, raised in Jiguaní, Granma province, Cuba. The external indicators were: egg weight, relative weight, polar and transverse diameter and shape index; weight, thickness and percentage of shell. The internal indicators were: weight, diameter, height, pH, index and percent egg white and yolk, Haugh Units. Data were compared with simple analysis of variance using the STATISTIC® package. Except for egg white index, egg white and yolk pH, the other indicators showed significant differences (P>0.05). The highest egg weight was found in Leghorn hens (57.74 g), compared to Camperas (54.18 g) and Semirrusticas (49.80 g). The highest relative weight was obtained in Leghorns (3.43%) and the lowest in Camperas (2.40%). Shell thickness did not differ between Camperas and Semirrústicas (0.33 and 0.36 mm), Leghorn (0.40 mm). The highest egg white weight (35.72 g), egg white percentage (61.80%) and lowest yolk percentage (26.06%) were obtained in Leghorn birds despite having the highest egg weight.
