| Spanish abstract | Este artículo es una contribución a la historia de la higiene veterinaria y la sanidad de los productos alimenticios de origen animal en Medellín entre 1913 y 1926. Por aquel tiempo en Antioquia se amplió la frontera agrícola y ganadera, mientras que Medellín inició su consolidación como polo de desarrollo económico y poblacional del departamento y principal centro de comercialización ganadera de Colombia. Para dar marcha a este proceso, las autoridades nacional, departamental y municipal reglamentaron la sanidad animal, la enseñanza veterinaria y el fomento de la actividad pecuaria. Fuentes primarias como correspondencia y prensa oficial dejaron ver que el discurso higienista partió de la iniciativa de las élites económicas y políticas antioqueñas, las cuales resolvieron el problema sanitario de la carne y la leche en Medellín municipalizando las empresas encargadas de proveer estos alimentos |
| English abstract | This article contributes to the history of veterinary hygiene and the salubrity of animal-based foods in Medellin between 1913 and 1926. During this period, the agricultural and ranching frontier in Antioquia expanded and Medellin, with a growing population, started to become a pole of economic development and the principal livestock market in Colombia. To assist this process, national, departmental, and municipal authorities regulated animal health, veterinary instruction, and encouraged the growth of the livestock industry. Primary sources, such as correspondence and official newspapers, show that the hygienist discourse was initiated by economic and political elites from Antioquia and that the sanitary problems regarding meat and milk were resolved in Medellin by having the city take over the companies charged with providing these foodstuffs |
