| Spanish abstract | Este artículo aborda tres diferentes aspectos de la relación entre cultura y riesgo alimentario. El primero de ellos, trata sobre los hábitos de consumo de los sonorenses, de sus preferencias dietarias, sus impactos en la salud, así como los significados y representaciones simbólicas que orientan estas acciones. El segundo, hace referencia a la influencia del mercado y las grandes empresas agroalimentarias en la producción y asimilación de riesgos. Y el tercero, puntualiza las distintas formas de organización y las respuestas institucionales y no institucionales de la sociedad civil para enfrentar los riesgos provocados por la ingesta de alimentos. Con ello se intenta advertir acerca de los problemas y condicionamientos de consumo alimentario que inducen la globalización y las tradiciones locales, como dos de las fuerzas medulares que permean y transforman la seguridad alimentaria de los sonorenses y su cultura |
| English abstract | This paper is an approach to three different aspects of the relation between culture and nourishing risk. The first of them deals with the food habits of the Sonoran people, its nutritional preferences, its impacts in health, as well as the meaning and symbolic representations that orient these actions. The second one makes reference to the influence of the market and the great agroalimentary companies in the production and assimilation of risks. And third emphasizes the different forms of organization, and the institutional and non institutional responses from the civil society to face the risks caused by food ingestion. The article highlights the problems and agreements of nourishing consumption that induce the local globalization and traditions, like two of the social forces that configure and transform the nourishing security of the Sonoran people and its culture |
