| Spanish abstract | En este trabajo se presenta un método de determinación de color en los productos azucarados que garantiza la exactitud de sus resultados y la aplicación práctica del mismo en todas las etapas del proceso de producción de azúcar, permitiendo establecer un sistema de control que evite la producción de azúcar fuera de la norma establecida para el parámetro color en el producto. Se valida la técnica propuesta con resultados satisfactorios en cuanto a su especificidad, precisión y exactitud bajo las condiciones estudiadas. Se pudieron definir con su aplicación los comportamientos típicos del color en cada etapa del proceso y por tanto su dinámica |
| English abstract | This work aims at presenting a method of determination of color in sugared products that guarantees the exactness of its results as well as its practical application in all the stages of the process of production of sugar permitting to be able to establish a control system that guarantee the production of sugar within the parameters of quality established. In the work it is demonstrated that the main validation parameters, as linearity, specificity, precision and accuracy, they fulfill the established requirements for this type of method under the selected conditions. The results permit defining with his application the typical behaviors of the color in each stage of the process and therefore its dynamics |
