The purpose of the study was to determine serum levels of 16 phytoestrogens by HPLC-DAD-ESI-MS as a ref ection of their recent consumption. The study involved 100 women ≥ 25 years, who provided a blood sample and completed a health and sociodemographic questionnaires. Serum levels were higher for equol, kaempferol and luteolin (71.2, 50.4 and 18.7 nmol/L). Lower levels were for matairesinol, secoisolariciresinol and formononetin (0.1 nmol / L respectively). These levels ref ected a phytoestrogens diet composed of fruits and vegetables, animal-derived food, and to a lesser extent grains and cereals. To include dietary intake of phytoestrogens represents an alternative to prevent the development of chronic diseases. Serum levels of these phytoestrogens would be useful in epidemiological studies where they attempt to know their consumption |
