Resumen en español El objetivo de este trabajo fue determinar las mejores condiciones para el crecimiento del hongo comestible Pleurotus ostreatus. Las variables investigadas fueron: tipo cepa, tipo de substrato sólido y tamaño de partículas. En el primer caso fueron analizadas dos cepas locales y en base a la velocidad de crecimiento lineal se eligió a la cepa CEBA-GLIIE-010106. Esta cepa exhibió una velocidad de 0,583 mm/h, creciendo en medio rico. En las otras dos variables fueron analizados tres niveles: residuos de fríjol, residuos de plátano y bagazo de caña; todos producidos en el Ecuador. El tamaño de partícula fue investigado a 6 a 9 mm. Fueron escogidas como variables respuestas: la productividad, la bioconversión y el costo unitario de materias primas. El análisis estadístico demostró que no existe diferencia significativa entre los tamaños de partícula en el rango investigado y que el mejor substrato para el crecimiento es el residuo de fréjol, con una bioconversión de 12,83%, una productividad de 0,51 g MS hongo kg–1MS sustrato inicial d–1 y costo unitario de las materias primas de 39,67 $/kg MS hongo
Resumen en inglés The aim of this work was to determine the best conditions for the growth of the edible mushroom Pleurotus ostreatus. The variables investigated were: type of strain, type of solid substrate and particles size. In the first instance two local strains were tested resulting best the strain CEBA-GLIIE-010106, based on the linear growth rate. The growth rate for this strain was of 0,583 mm/h. In the second variable three wastes were considered: the whole plant of bean, the stalk part of the banana plant and sugarcane bagasse, all produced in Ecuador. The particle size was investigated from 6 to 9 mm. As response variables three variables were chosen: Productivity, the bio-conversion and the unit cost of raw materials. According to the statistical analysis it was demonstrated that for the three response variables there is no significant differ-ence for the particle size in the range studied and that the best solid substrate for the growth is the waste from the harvest of bean, with bioconversión of 12,83% and productivity of 0,51 g DM mushroom kg–1DM initial substrate d–1 and unit cost of raw materials of 39,67 $/kg Biomass
