Resumen en español | Prosopis juliflora“cuji”, especie ampliamente diseminada en Venezuela, produce goma a nivel de lasemilla. Se estudio el comportamiento de este hidrocoloide en la preparación de néctar de fruta de bajocontenido calórico. El ensayo consistió en seis tratamientos, utilizando diferentes concentraciones de la goma (0,10; 0,15; 0,20; 0,25 y 0,30%) y un tratamiento control (sin goma). Se evaluaron las característicasfísico-químicas (pH, °Brix, viscosidad, turbidez) y sensoriales (apariencia, sabor, textura) de los productoselaborados. Se aplicó un diseño experimental totalmente aleatorizado. La comparación de las medias serealizó por el método de Tukey, con un nivel de significancia (p<0,05), mediante el procedimiento GLM delpaquete estadístico SAS. Los resultados obtenidos mostraron que los (°Brix), se incrementaron a medidaque aumento la concentración de la goma. El tratamiento control, presento valores de sólidos solubles to-tales significativamente menores (p< 0,05) con respecto a los tratamientos que contenían goma, duranteel almacenamiento. La viscosidad exhibida por el néctar elaborado a la mayor concentración de goma(0.30%), se incrementó significativamente (p<0,05) con respecto a los valores observados para el productoresultante del tratamiento control (sin goma) y los correspondientes a las menores concentraciones degoma ensayada. Se evidenció que existen diferencias significativas (p<0,05) en los valores de turbidez delos néctares de mango preparados a diferentes concentraciones de goma deP. julifloray el tratamientocontrol. Los valores de viscosidad aparente y turbidez en los néctares elaborados presentaron una correla-ción positiva y altamente significativa (r= 0,94). Resumen en inglés | Prosopis juliflora“cují”, species widely disseminated in Venezuela, produces seed gum. The behaviorof this hydrocolloid in preparation of fruit nectars of low caloric content was studied. Six treatments, usingdifferent gum concentrations (0.10; 0.15; 0.20; 0.25 and 0.30%) and a control treatment (without gum),were carry out. The physicochemical characteristics (pH, °Brix, viscosity, turbidity), sensory (appearance,flavor, texture) of the elaborated product, were determinate. An experimental totally randomized designwas applied. The comparison of the averages was made using Tukey’s method, with a significance level of(p <0.05), there was used the procedure GLM of the statistical package SAS. The results obtained showedthat, the soluble solid (°Brix), increased as increase the concentration of the (gum). The control treatment,presented a significant decrease (p <0.05) in the values of soluble solid during the storage. The viscosityexhibited by the nectar elaborated using the highest gum concentration (0.30%), was increase signifi-cantly (p <0.05), compared to the values observed for the control treatment (product without gum), andwith the products prepared with the minor concentrations of gum. There were significant differences(p <0.05) in the values of turbidity of prepared nectars of mango, for different concentrations of gum (P.juliflora), and the control treatment. The values of apparent viscosity and turbidity in the elaborated nec-tars, present a positive and high significant correlation (r = 0.94). On the other hand, the gum ofP. julifloracontributes to provide an excellent sensory characteristic to the nectars elaborated.
