Resumen en inglés | The vegetables are foods fi ber source with great importance. This work aimed at evaluating the amount of total fi bers and its fractions in rocket and lettuce cultivars cultivated at hydroponic systems in different maturation stages. The plants were collected and analyzed according to the AOAC3 method 991.43. There were signifi cant differences in relation to the insoluble fi ber fraction with an increase of soluble fi ber on rocket in relation to lettuce (p=0.00015). Rocket showed a signifi cant decrease of soluble fi ber in two maturation period. The total fi ber value also presented a decrease although not signifi cant. Lettuce showed a reduction of total fi ber and insoluble fi ber value but in later stages that were not considered statistically signifi cant. It was concluded that hydroponic rocket has a larger amount of total fi ber than hydroponic lettuce; both rocket and lettuce present a larger quantity of insoluble fraction in relation to soluble fraction. These results are important to specify the quality and quantity of vegetable fi bers more consumed in the country and thus, the nutritionist may have a more specifi c diet therapy conduct and more appropriate to the needs of each patient |
Resumen en portugués | As hortaliças são alimentos fontes de fi bras de grande importância. Este trabalho teve como objetivo avaliar o teor de fi bra alimentar total e suas frações em cultivar de alface e rúcula, sob sistema hidropônico, em diferentes estágios de maturação. As plantas foram coletadas e analisadas segundo método de n. 991.43 da AOAC. ³ Houve diferenças signifi cativas em relação à fração da fi bra insolúvel, sendo maior na rúcula em relação à alface (p=0,00015). A rúcula teve diminuição signifi cativa da fi bra solúvel em dois períodos de maturação. A fi bra alimentar total também teve diminuição, porém, não apresentou signifi cância. A alface mostrou uma tendência em diminuir a fi bra alimentar total e insolúvel nos estágios mais avançados, porém tais dados não foram estatisticamente signifi cativos. Concluise que a rúcula hidropônica tem uma quantidade maior de fi bras total em relação à alface hidropônica, sendo que as hortaliças rúcula e alface têm uma quantidade maior da fração insolúvel em relação a solúvel. Estes resultados são importantes, pois especifi cam a qualidade e a quantidade das fi bras das hortaliças mais consumidas no país e desta forma, o nutricionista pode ter uma conduta dietoterápica mais específi ca e mais adequada para as necessidades de cada paciente |
